Sensational Strawberry Chicken Salad
˝ cup mayonnaise or low-fat dressing
2 tablespoons chopped chutney
1 tablespoon lemon juice
1 teaspoon grated lemon peel
1 teaspoon curry powder
1/4 teaspoon salt
2 cups diced cooked chicken
1 cup sliced celery
1/4 cup chopped red onion
1 ˝ pints fresh strawberries, stemmed
lettuce leaves
mint sprigs
In a large bowl mix together mayonnaise, chutney, lemon juice and peel, salt and curry powder. Add chicken, celery and onion; toss, cover and chill. Just before serving, slice 1 pint of the strawberries; toss gently with chicken mixture. Line platter or individual serving plates with lettuce. Mound chicken mixture on lettuce. Garnish with whole strawberries and mint. Makes 4 servings.
Strawberry Get Up and Go
˝ cup frozen sliced strawberries in syrup, partially thawed
˝ cup skim milk
1/4 cup plain yogurt
2 tablespoons frozen orange juice concentrate
1 orange slice
In container of electric blender combine all ingredients except orange slice. Blend until smooth. Pour into tall glass and garnish with orange slice. Makes 1 (12 ounce) drink.
Grape and Spinach Salad
1 pound spinach, washed and dried
1 cup red or green grapes, halved and seeded if necessary
1 apple, cored and diced
1/3 cup dry roasted peanuts or cashews
2 tablespoons chopped green onion
1 tablespoon toasted sesame seeds
Chutney Dressing
Tear spinach into bite-sized pieces. Toss with grapes, apple, peanuts, green onion and sesame seeds. Toss with Chutney Dressing to coat. Makes 6 servings, 101 calories, 5 g fat, 6 g fiber and 55 mg sodium/serving.
Chutney Dressing
3 tablespoons oil
2 tablespoons white wine vinegar
1 tablespoon bottled chutney
1/4 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon dry mustard
dash bottled hot pepper sauce
Combine all ingredients. Makes 1/3 cup, 77 calories, 8 g fat, 0 fiber and 113 mg sodium/ 1 teaspoon serving.
Grape Salsa for Tortilla-Cheese Roll-Ups
1 cup red or green grapes, seeded if necessary and chopped
1/3 cup finely chopped onion
1/3 cup Anaheim chili, seeded and chopped
2 tablespoons olive oil
2 tablespoons chopped cilantro
2 tablespoons chopped sweet red pepper
1 tablespoon lime juice
1 tablespoon white vinegar
1 clove garlic, minced
4 flour tortillas
Cheese Spread
Combine grapes, onion, chili, olive oil, cilantro, red pepper, lime juice, vinegar, garlic and salt to taste. Spread tortillas with Cheese Spread. Spoon 1/4 cup grape salsa on each tortilla. Roll up, and cover and refrigerate at least 1 hour. Cut in 1-inch slices. Makes 28 appetizers, 28 calories, 1.4 g fat, 0.3 g fiber, 0 cholesterol, 21 mg sodium/serving.
Cheese Spread
1 (8 ounce) package cream cheese
3/4 cup finely shredded Cheddar cheese
Mix thoroughly. Makes 1 ˝ cups, 40 calories, 3.7 g fat, 17 mg cholesterol, 43 mg sodium/serving.
Grape Yogurt Delight
2 cups vanilla-flavored lowfat yogurt
1 ˝ cups red or green grapes, halved and seeded if necessary
1 tablespoon grated orange peel
˝ teaspoon ground cinnamon
Combine all ingredients; mix thoroughly and refrigerate. Spoon into serving dishes for snack or light dessert or serve over hot or cold cereal. Makes 3 ˝ cups, 80 calories, 1 g fat, 0.7 g fiber, 3 mg cholesterol, 44 mg sodium/1/2 cup.
